Low Fat Ham and Cheese Strata
Make this low fat ham, cheese and spinach strata for a casual weekend brunch. It's a perfect low fat brunch option at Easter, a time when you might want to enjoy an egg-based dish. Using reduced fat cheese plus a mix of whole eggs and egg whites helps reduce the amount of fat and cholesterol. Use one cup of egg substitute instead of the egg combination if you prefer. This strata can be assembled the night before. Simply cover and refrigerate until ready to bake.
INGREDIENTS:
10 ounces day-old Italian or French bread, cut into cubes
2 whole eggs
4 egg whites
2 cups skim milk
1 cup reduced fat sharp cheddar cheese, shredded
2 tsp Dijon mustard
1 10-ounce package of frozen chopped spinach, thawed and squeezed dry
4 slices lean cooked ham. chopped
Freshly ground pepper, to taste
PREPARATION:
Preheat oven to 350 degrees.
Coat an 11 X 7-inch baking dish with nonstick cooking spray.

In a large bowl, whisk eggs and egg whites together. Add milk, half the cheese, mustard, spinach and ham.

Stir well. Add bread cubes and toss well. Pour egg and bread mixture into baking dish. Top with remaining cheese and freshly ground black pepper.
Bake uncovered for 40 minutes. Serves 8.

Deviled Eggs

12 hard-cooked eggs
1/2 cup fat free mayonnaise
2 tsp Dijon mustard
2 tbsp scallions, finely chopped
1 tbsp chives, finely chopped
Paprika
PREPARATION:
Cut cooked eggs in half lengthwise. Scoop out yolks and place them in a bowl. Mash the egg yolks with a fork; add mayonnaise, mustard and scallions. Mix well. Spoon yolk mixture into egg halves. If you have a pastry bag with a star-shaped tip, you could pipe the yolks into the whites. Top with chives. Cover and refrigerate until ready to use. Sprinkle with a little paprika before serving if you like.

Low Fat Egg Drop Soup

4 cups chicken broth or stock
2 egg whites, lightly beaten
1/2 teaspoon sugar
Salt, to taste
2 teaspoons Chinese rice wine or dry sherry, optional
2 green onions, (spring onions, scallions) green parts only, thinly sliced into small rounds
PREPARATION:
In a wok or saucepan, bring the 4 cups of chicken broth to a boil.
Add the sugar, salt, and the rice wine or dry sherry if using. Cook for about another minute.
Remove from the heat. Gradually stir in the egg white, stirring in one direction only.(Chopsticks are ideal for this if you have them). Garnish with the green onion and serve.

Nutritional Breakdown - based on 3 servings
Each serving contains: Calories 71, 2 g Total Fat, 1 g Saturated Fat, 3 g Carbohydrates, 8 g Protein, 0 mg Cholesterol

Chinese Chicken Stock
3 pounds chicken pieces (backs, necks, or wings)
10 cups cold water
3 slices fresh ginger
2 green onions (spring onions, scallions), cut into 1-inch pieces
1 tablespoon Chinese rice wine or dry sherry
Salt, to taste
Black pepper, to taste, optional
PREPARATION:
Rinse the chicken pieces under running water. Place in a large pot with 10 cups water (or enough to cover).
Add the ginger, green onion, rice wine or sherry. Bring to a boil over medium heat, occasionally skimming off the foam that rises to the top.
Add salt to taste and black pepper if desired.
Cover, reduce the heat and simmer for 2 hours. Strain the broth and use as called for in recipes. Yields about 8 cups.

Thumbs up How To Lower the Fat in Chinese Cooking - 03-24-2007, 08:53 PM

Avoid dishes with heavy sauces, such as red-cooked dishes that are simmered in dark soy sauce and sugar.
If you’re trying to decide which regional cuisine to try, Cantonese is generally the best choice. Cantonese dishes tend to be light, using fresh ingredients.
Reduce the amount of oil you use for stir-frying. If the food starts to stick, add water or broth. The broth also adds extra flavor.
When deep-frying, make sure that the oil is at a high enough temperature before cooking. Deep-frying food at too low a temperature makes it greasy. Be sure not to overcrowd the wok with food, as this will also lower the temperature. When properly done, deep-fried dishes retain only a small amount of oil.
Try other cooking methods besides stir-frying and deep-frying, such as steaming and baking.
Try partially freezing meat. This will make it easier both to remove the fat and to cut the meat into thinner slices. Always trim the fat off meat before cooking.
Reduce the amount of meat in your meal. The average Chinese daily meal is grain and vegetable based, with meat playing a secondary role.
Author Stephen Wong notes that fat does serve the useful purpose of dispersing flavor. To make a low-fat dish more flavorful, he suggests increased use of healthy seasonings such as ginger, garlic, and cilantro.
Stick to noodles that are lower in fat. For example, a cup of cooked rice noodles has 0.352 grams of fat, while the same amount of chow mein noodles has a whopping 13.842 grams of fat. (Source: USDA)
Finally, if a recipe calls for coconut milk, try one of the skim or low-fat versions.

hello, i'm new here. i'm having a hard time looking for a taiwanese shredded beef with basil recipe......we have a taiwanese restaurant close by where i live and we go there once a week......i always order the shredded beef w/ basil.......its sooo good....now i'm on a mission to find the recipe........the beef is somewhat dark brown in color....hmm....maybe i can post a picture here? we'll see.....anyway, if anyone can share their recipes, please. thanks
